Occam's Razor merely states that, if there are two possible explanations, the one with the fewest assumptions is usually correct.

There is no principle that states the theory with the fewest assumptions must be correct. That would clearly be nonsensical.

For example, if you ever watch a stage magician, the simplest explanation is that they really are doing magic. The true explanation, how the trick actually works, is usually far more complicated.
